We went out for a community concert at the end of summer for my god mother’s husband’s birthday who happens to be a key lime fanatic.Giving me this idea of making some key lime cupcakes.
This treat had a smooth lime zing that wasn’t too over powering. The bottom of the cake was supported by a honey gram cracker crust that provided a crunch. A yellow cake was used as a base that was infused with fresh lime juice and zest. Topped with a simple butter cream frosting that had key lime filling substituting some of the butter. Then of course garnished with some of the gram cracker and a lime wedge. It was the perfect recipe for a summer evening outdoors.
